This happens because the star rating you see during auctions is based on the seller's manager level, not yours. If you buy from a manager whose level is lower than yours, the player will appear one star higher in the auction view.
To see the actual star rating the player will have after you acquire him, simply:
Tap the seller’s avatar during the auction.
Check the player’s rating in their squad.
The stars shown there will match what you receive.
